This full immersion Certificate Program has been developed in collaboration with Campus Citta’ del Sapere and aims to suit a variety of interests in the food and catering sector … from Amateurs to restaurant managers, brand designers & food bloggers interested to experience the most critical success factors of the Italian food industry:
1) the family structure of the majority of Italian companies active in this sector, which plays a crucial role in terms of corporate identity, business development and mainstream perception of Italian culinary traditions 2) the importance of place of origin, local and artisanal ingredients, home recipes and slow consumption in defining food quality and identity in Italy, even 3) the peculiarity of our food culture which relies on raw materials and lack of formality more than on elaborate preparation and etiquette.
Principles of Food Design and innovative entrepreneurial models will be illustrated throughout the program with focus on specific cases of: label and packaging design; food with shapes, taste or nutritional factors aimed to target specific markets or customer niches; food experiences and interiors designed with the aim to enhance customers’ relationship with the local territory, producers, retailers, chefs and restaurateurs.
1 week Full Immersion in Naples and Campania: 2 days of wine grapes harvest during the season and wine tasting and production in the other seasons; 3 days of in company visits and do and eat it labs focused on mozzarella di bufala, Pasta & Pizza; 1 day with a renowned Chef
2 week Full Immersion in Campania and Lazio: 3 days of in company visits and do and eat it labs focused on mozzarella di bufala, Pasta & Pizza and 2 days with a renowned Chef in Naples; 2 days of wine grapes harvest during the season and wine tasting and production in the other seasons; 3 days of labs and workshops in Rome with food designers, local chefs and restaurateurs.
This Certificate program is in English and with a minimum number of 12 participants it is also available in any language thanks to our team of certified interpreters.

2 week Program Fee: Eur 3100 plus Eur 300 of Application fee
Pick up and drop off at the airport, accommodation in double room, shuttle and transportation costs required by the program, all workshops, labs, in company visits and meals subsequent to do and eat it sessions are included into the program Fee.
